The egg has often been referred to as the perfect food; full of vitamins & nutrients, a great source of high quality protein and amino acids, they promote healthy brain and eye function and even aid in weight loss. It’s hard to believe that the greatness of eggs can be improved, but leave it to bartenders to find a way! The egg is a delicious cocktail ingredient, and has become an essential in any cocktail bar.

Bartenders over a century ago were the first to start utilizing the egg in cocktail making. Shaking up a flip or a fizz with a whole egg or just the white created a rich, creamy, textured drink that couldn’t be replicated.  Many of these truly classic cocktails have become icons in the cocktail renaissance that we have seen in the last few decades.

What better way to celebrate World Egg Day than with a cocktail or two? Here are a couple of my favorite drinks using nature’s perfect food! Cheers!

Clover Club

Clover Club Cocktail



  1. Combine all ingredients in mixing glass
  2. Shake vigorously to emulsify egg with liquid
  3. Add ice to shaker and shake well
  4. Double strain into a coupe glass

If you are feeling extra fancy try:

The Aviation Ramos


  • 2 oz Aviation American Gin
  • 1/2 oz Simple syrup (1:1)
  • 1/2 oz Freshly pressed lemon juice
  • 1/2 oz Freshly pressed lime juice
  • 1 Fresh egg white
  • 3/4 oz Heavy cream
  • 1-2 Dashes (3-4 drops) orange flower water

  • 1 oz Club soda


  1. Combine first seven ingredients in a mixing glass
  2. Shake vigorously to emulsify egg with liquid
  3. Add several pieces of ice, not filling the whole tin, and shake vigorously again for as long as you can, or until all ice is gone
  4. Strain into a collins glass and slowly pour club soda into the drink
  5. Gently stir to mix if necessary
