Hey, Honey


Pouring a round of Hey, Honey cocktails at the Feast Opening Party

This week is Feast in Portland. It is a celebration of all things local and delicious. With the help of Imbibe Magazine and The Commissary we took part in serving up some amazing drinks this week.

One cocktail in particular was especially popular so we thought it would be fun to share the recipe with our readers.

Hey, Honey

Recipe by: Sean Hoard


  • 1 1/2 oz Aviation American Gin
  • 1/2 oz freshly pressed Lemon juice
  • 1/2 oz Orgeat
  • 1/4 oz Honey syrup
  • Pinch of Jacobsen sea salt
  • Lavender DRY soda


  1. Combine first 5 ingredients in a shaker with ice and shake
  2. Strain into an ice-filled glass and top with soda
  3. Garnish with a piece of dried lavender

Easy Breezy Beach Hangs

September may be approaching rapidly, but the heat has not begun dissipating, and therefore, the beach is still a hot spot for fun hangouts. Recently my friends and I have found it entertaining and exhausting to pretend we are straight out of the movie Top Gun and play nonstop beach volleyball on the weekends. If you need a refresher on the classic volleyball scene pitting shirtless Tom Cruise and Val Kilmer against one another, click here. You won’t regret it.

While we are diving and flopping around in the sand, we imagine we look as good if not better than Cruise and Kilmer, though we actually look pretty ridiculous. The sun is hot and burns clear, the sand beneath it a million degrees. Each movement is slowed by the sand, tiring us extensively as we play rounds of two on two games. Despite the sweat and bad plays, we feel cool. And though it is hard work, it feels great.

In between these games are sweet, relaxing hang outs in the shade. With coolers of beer and water all around, I decided to upgrade our shady spot and bring some citrus and herb infused soda water, and of course some Aviation American Gin.  The citrus and herb water could not be easier to make and it was hit among the group. The option to mix in a touch of Aviation was appreciated and capitalized upon, though the water on its own was delightful and refreshing.

Citrus & Herb Infused Soda Water

  • 1 Orange, sliced
  • 2 Lemons, sliced
  • Handful of fresh Basil
  • 2 tablespoons Sugar (optional)
  • 2 liter of Soda water
  • Extra Orange slices for garnish

I put the fruit and herbs in a mason jar beverage dispenser and gently muddled them. I then covered them in the sugar and let that sit for 15 minutes. Then I poured the soda water in and let chill for an hour before heading to the courts. Once there, I added ice to keep it chill and allowed people to self serve until their hearts were content. It paired deliciously with Aviation and kept us hydrated. Without proper hydration, you can’t pull off all those sweet bumps, sets and spikes.

House Spirits Distillery Logo Contest Rules


House Spirits Distillery is moving to new digs in 2015 and with a new home comes a new look. We’re asking you to help us find our new look in our logo redesign contest. Here are the rules:


The “House Spirits Logo” contest will begin at  12:00 p.m. on November 24, 2014 EDT and end at 11:59:59 p.m. EDT on December 15, 2015. (“Contest Period”) Facebook, Inc.’s computer is the official time-keeping device for the Contest. The Contest is sponsored by House Spirits Distillery, 2025 SE 7th Ave, Portland, OR 97214 (“Sponsor”). The Sponsor is responsible for all aspects of this Contest. Participation in the Contest constitutes entrant’s full and unconditional agreement to these Official Rules, and Sponsor’s and Administrator’s decisions, which are final and binding in all matters related to the Contest.

Eligibility: Sweepstakes is open to legal residents of all fifty (50) states of the United States and the District of Columbia who are at least 21 years of age as of the start date. Employees, officers and representatives of House Spirits Distillery, and Administrator, and any of their respective parent companies, affiliates, franchisees, licensees, distributors, suppliers, subsidiaries, retailers, advertising/promotion agencies (collectively, “Released Parties”) and members of the immediate family (mother, father, brothers, sisters, sons, daughters and spouse, regardless of where they reside) and household members of each such employee, whether or not related, are not eligible to participate. Winning a prize is contingent upon fulfilling all requirements set forth herein. Void in Puerto Rico, the U.S. Virgin Islands, U.S. Military installations in foreign countries, and where prohibited, or restricted by law.

How To Enter: Participants must create an original design on the House Spirits logo. The design must be uploaded to House Spirits Distillery Facebook page.

All entries become the exclusive property of Sponsor and will not be acknowledged or returned. By participating, you consent for Sponsor to obtain, use, and transfer your name, address and other information for the sole purpose of administering this COntest.

Designs must be uploaded as a .jpg or .gif file not exceeding 4MB. All required information must be completed to enter and to be eligible to win. Incomplete entries will be disqualified. Proof of entering information is not considered proof of delivery to or receipt by Sponsor of an entry. Released Parties are not responsible for: lost, late, incomplete, illegible, incorrect, damaged, delayed, garbled, undelivered, misdirected, or postage due entries, essays and/or photographs. All entries become the exclusive property of Sponsor and will not be acknowledged or returned. Your submission of an entry constitutes your representation of eligibility, consent to participate in Contest and consent for Sponsor to obtain, use, and transfer your name, address and other information for the purpose of Contest administration.

Designs may not contain any image or depiction of the following: (i) materials which include or constitute trademarks, trade names or copyrighted works created or owned by any person or entity other than Entrant or for which the Entrant has not obtained owner’s permission to use; (ii) materials bearing children, profanities, or bearing the name or likeness of any celebrity, living or dead; (iii) materials which contain visible identifiable or potentially identifiable information including but not limited to phone numbers, website links, street addresses, email addresses or license plate numbers; (iv) inappropriate behavior for a general audience; (v) materials which violate anyone’s reasonable privacy expectations, violate any known agreement, or which are defamatory in nature; (vi) materials which do not comply with all other requirements in these Official Rules. Entries which do not conform to these guidelines will be disqualified. Sponsor reserves the right to reject or disqualify any entry which Sponsor, in its sole and absolute discretion, determines to be inconsistent with the letter or spirit of the Official Rules or potentially damaging to its, the Contest’s, or another’s image or reputation.

Internet Limitations of Liability: Sponsor reserves the right, in its sole discretion, to cancel, terminate, suspend and/or modify the Contest, or any part of it, at any time, without notice, and to cancel, terminate, modify or suspend the Contest in whole or in part, at any time, without notice and award prizes using all non-suspect eligible entries received as of the termination/suspension date, if any infection, computer virus, bugs, tampering, unauthorized intervention, fraud, technical failures, or any other cause beyond Sponsor’s control, affects the integrity or proper conduct of the Contest. Sponsor’s failure to enforce any term of these Official Rules shall not constitute a waiver of that provision.

Sponsor is not responsible for any damage to an entrant’s system which is occasioned by participating in this Contest or by downloading any information necessary to participate in the promotion. Sponsor also is not responsible for incorrect or inaccurate entry information, whether caused by Internet users or by any of the equipment or programming associated with or utilized in the Contest or by any technical or human error, which may occur in the processing of the entries in the Contest. CAUTION: ANY ATTEMPT TO DELIBERATELY DAMAGE ANY WEBSITE OR UNDERMINE THE LEGITIMATE OPERATION OF THE CONTEST IS A VIOLATION OF CRIMINAL AND CIVIL LAWS AND SHOULD SUCH AN ATTEMPT BE MADE, THE SPONSOR RESERVES THE RIGHT TO SEEK DAMAGES OR OTHER REMEDIES FROM ANY SUCH PERSON(S) RESPONSIBLE FOR THE ATTEMPT TO THE FULLEST EXTENT PERMITTED BY LAW. In the event of a dispute regarding the identity of an individual who actually submitted an online entry, the entry will be deemed submitted by the authorized account holder of the email account. “Authorized account holder” is defined as the natural person who is assigned to an email account by an Internet access provider, online service provider or other organization (e.g., business, educational, institution, etc.) that is responsible for assigning email addresses for the domain associated with the submitted email address. Potential winner may be required to show proof of being the authorized account holder.

Prizes: Grand Prize winner will receive one House Spirits Distillery Swag Bag which will not exceed the value of fifty US dollars ($50) and an invitation to be honored at the new distillery opening party.

Odds of winning will depend on the total number of eligible entries received. By accepting any of the aforementioned prizes, the winner agree to release the Released Parties from any and all liability whatsoever for any injuries, losses, or damages of any kind caused by entering the promotion or for damages of any kind caused by any prize or resulting from acceptance, possession, or use/misuse of prize awarded, or while preparing for, or participating in the usage of the prize. Prizes are not exchangeable, transferable, or redeemable for cash. There are no substitutions unless specified by the Sponsor. The Sponsor reserves the right at its sole discretion to substitute any prize package with another prize of equal or greater value.

Drawing and Notification: Grand prize winner will be selected from among all eligible entries by a panel of House Spirits Distillery employees. A winner may not be selected. All decisions are final in all matters relating to this Contest. The drawing will be completed on or about December 18, 2014. The Grand Prize winner will be notified by private contact on social media channel of entry.

Prize Conditions: All local, state and federal taxes are the sole responsibility of winner. Upon initial notification and verification of the Grand Prize winner, confirmation will be sent to the winner via email or other home delivery service of Sponsor’s choice. If a prize or prize notification is returned as unclaimed or undeliverable to a potential winner, if potential winner cannot be reached within two (2) calendar days from the first notification attempt, or if a potential winner is not in compliance with these Official Rules, then such person shall be disqualified and an alternate winner may be selected for the prize at issue. The potential Grand Prize winner is subject to verification before any prize will be awarded.

Other Terms & Conditions: The Contest is responsible for all applicable federal, state, and local laws (if applicable). By participating in the Contest, entrants agree to be bound by these Official Rules and agree that: 1.) Released Parties and their designees and assigns shall have the right and permission to use (unless prohibited by law) the winner’s name, photograph, likeness, statements, biographical information, voice and address (city and state), in all forms of media, in perpetuity, without further notice, permission or compensation, and 2.) Released Parties and their designees and assigns and all of their respective officers, directors, employees, representatives and agents shall have no liability and entrant will indemnify, defend and hold Released Parties harmless from any liability, loss, injury, or damage to entrant themselves or any other person or entity, including personal injury, death or damage to personal or real property, to entrant or any other person or entity due in whole or in part, directly or indirectly, by reason of the acceptance, possession, use or misuse of the prize or participation in this Contest. Entrants further acknowledge that said parties have neither made nor are in any manner responsible or liable for any warranty, representation or guarantee express or implied, in fact or in law, relative to the prize, including, but not limited to, its quality or fitness for a particular purpose. Sponsor reserves the right, in its sole discretion, to disqualify any entry and to modify, terminate or suspend this Contest should virus, bugs, non-authorized human intervention, action of entrants, or other causes beyond the reasonable control of Sponsor corrupt or impair the administration, security, fairness or proper play of the Contest and, if the Contest is modified, terminated or suspended, at Sponsor’s discretion, select winners from those eligible, non-suspect entries. Entrants further acknowledge that said parties have neither made nor are in any manner responsible or liable for any warranty, representation or guarantee express or implied, in fact or in law, relative to the prize, including, but not limited to, its quality or fitness for a particular purpose.

Disputes: By entering the Contest, entrants agree that 1.) Any and all disputes, claims, and causes of action arising out of or connected with the Contest, or any prizes awarded, shall be resolved individually, without resort to any form of class action; 2.) Any and all claims, judgments and awards shall be limited to actual out-of-pocket costs incurred, including costs associated with entering the Contest but in no event attorneys’ fees; and 3.) Under no circumstances will any entrant be permitted to obtain any award for, and entrant hereby waives all rights to claim, punitive, incidental or consequential damages and any and all rights to have damages multiplied or otherwise increased and any other damages, other than for actual out-of-pocket expenses, and any and all rights to have damages multiplied or otherwise increased. All issues and questions concerning the construction, validity, interpretation and enforceability of these Official Rules, or the rights and obligations of the entrants and Sponsor or the Released Parties in connection with the Contest, shall be governed by, and construed in accordance with United States law. Any legal proceedings arising out of this Contest or relating to these Official Rules shall be instituted only in the federal or state courts of Oregon, and the parties consent to jurisdiction therein with respect to any legal proceedings or disputes of whatever nature arising under or relating to these Official Rules. The invalidity or unenforceability of any provision of these Official Rules shall not affect the validity or enforceability of any other provision. In the event that any provision is determined to be invalid or otherwise unenforceable or illegal, these Official Rules shall otherwise remain in effect and be construed in accordance with their terms as if the invalid or illegal provision were not contained herein. The value of the prizes set forth above represents Sponsor’s good faith determinations of the ARV thereof and such determinations are final and binding and cannot be appealed. If the actual value of any prize turns out to be less than the stated ARV, the difference will not be awarded in cash.

To Be A Patriot


Everyone who is old enough to remember knows where they were on September 11, 2001.  I was in chemistry class trying not to fall asleep when my teacher transformed from her usual happy self to a distraught and sullen person. The TV was rolled to the front of the classroom and the news was turned on.  The shock followed.  By the next period I was in Spanish class and I saw my dad appear in the doorway. I immediately began to cry. My mom was in Washington, D.C. for work and since the Pentagon had been hit my dad was unable to reach her.  Two hours later she called us from her cell phone.  She was okay, but stuck in the city. I felt selfish for the relief it gave me, when I knew so many others would not receive good news.  I lost many neighbors and friends that day and they, along with everyone else who lost their lives to senseless violence, deserve to be remembered.

Everyone at Aviation American Gin would like to thank those who serve our country and remember those who lost their lives on 9/11.

Cantaloupe Campari Cubes


As a kid my mom would always keep a bowl of sliced cantaloupe in the fridge for my little sister and I to snack on. It’s a fruit that I’ve always associated with hot summer days and my best childhood memories. I recently stumbled upon a recipe for Cantaloupe Campari Popsicles on Food Republic, which I wanted to somehow incorporate into my adult summertime favorite, Aviation and Soda. It’s such a great, simple drink that easily be spiced up a little, or cantaloupe iced up in this case. Rather than using popsicle molds as the recipe suggested I decided to instead pour the cantaloupe mixture into ice trays. After patiently waiting for the mixture to freeze I poured a few Aviation and Sodas, cantaloupe cube included. The results were amazing!

Cantaloupe Campari Ice Cubes



  • 1 Cantaloupe, peeled and seeded
  • 3/4 cup Simple syrup
  • 1/4 cup Campari


  1. Cut the cantaloupe into chunks and blend in a food processor (About 2 1/4 cups once blended)
  2. Pour blended cantaloupe into a large pitcher and add simple syrup
  3. Slowly add Campari, until its taste is noticeable, and mix
  4. Pour the mixture into ice cube molds of any size and place in freeze*

*Leave some space at the top so the mixture has room to expand

Aviation and Soda




  1. In a glass, add spirits & mixers
  2. Fill with ice and stir
  3. Garnish with a lime wedge

Craft Association

The rise of craft spirits like our Aviation American Gin is revolutionizing the spirits industry.  Nielsen estimates that total volume of craft spirits is up +85% over the past year, and 1 in 6 households now regularly buy craft brands.  By most accounts, craft spirits are on pace to become an even greater force than craft beer has been, and some day soon these amazing brands could generate more than 10% of industry volume.  These are good times for craft distillers and for people everywhere who seek brands that are authentic and share their values.
Incredibly, all of this has happened without a trade association to help craft producers overcome the barriers created by larger competitors and by decades of over-regulation.  Neither craft brewers, nor independent winemakers, would be where they are without their respective trade associations.  Just how much bigger would craft spirits be with that sort of support?
We’re about to find out!
Over the past year, dozens of craft distilleries from around the country have worked tirelessly to establish the American Craft Spirits Association (ACSA), a non-profit advocacy group with an elected board and a clear mission – to remove the barriers that stand in the way of the craft spirits revolution.  A majority of the ACSA membership met earlier this year in Denver, CO, and at that gathering we were deeply honored to be elected the first president of ACSA.
Between now and the next ACSA convention, which will take place next February in Austin, TX, we will work closely with our peers from around the country to fight for tax fairness (we are severely disadvantaged versus both beer and wine producers), integrity (we will roll out a code of conduct that ensures honest labeling of craft brands), for media, trade, and consumer awareness of craft spirits, and much more.
How far will the craft spirits revolution go?  Nobody knows for sure, but as ACSA leaders we will do all we can to ensure that consumers, and not large competitors or overzealous regulators, have the final say.

Wine Enthusiast awarded Aviation American Gin with 97 points and ranked it in the Top 50 Spirits.  This happens to be the highest rated gin as well as the highest rated cocktail spirit.  We are very proud and honored to have received this score.  It only proves what we have thought all along…Aviation American Gin is the TOP GIN!
