Weekly Winner – Photo Contest

Cocktails & Comfort Foods

Comfort Cocktails #1

Spring is a funny thing in the Great Northwest. Some days are cloudless, bug-less, mid-70’s lay-in-the-grass kind of days. Other days are cliched with a grey pillow of clouds offering slight mists of rain to hail the size of a Buffalo Nickel. This week in our hometown we’re experiencing the latter, which allows for a wide variety of Comfort Foods.

Comfort Food comes in many forms, from tomato soup with a side of grilled cheese sandwich to Grandma’s famous meatloaf. Today it’s Thai noodle soup. Last week Pok Pok’s owner Andy Ricker opened a fantastic spot called Sen Yai, a Thai Noodle House on SE Division in Portland, OR. To start the lunch out right they have a long-standing Pok Pok family Aviation Gin cocktail called Deviation, a play on the namesake cocktail of our Aviation Gin. The balance of Aviation Gin, lemon juice, and cherry liqueur & juice in the cocktail was excellent with the spicy Mama Naam, a Northern Thai street food staple.

A Cocktail Event

Making a cocktail is part knowledge, part art-form, and often part improvisation.

What better way to learn to improve your cocktail game than to go straight to the source? Let the master craftsmen of Distillery Row show you how it’s done! After all, they make the spirits so they know how to best bring out the subtle nuances and bold flavors of their products in both simple and more complex concoctions. Let them help demystify your cocktail!

Join Eastside Distilling, Vinn Distillery, New Deal Distillery, Stone Barn Brandyworks, and us on Saturday, June 29th for an afternoon and evening of spirits tasting and cocktail instruction. The event features all five distilleries under one roof with over 25 products including gins, whiskeys, brandies, vodkas, rums, and specialty spirits. Instructional talks throughout the event will cover a wide range of topics from basic mixology to more specialized tips and information—all of which will allow you to take your cocktail-making skills to the next level.

The Cocktail Demystified is designed to get you up and running as a home bartender. You’ll be able to taste new spirits, learn how to use them in cocktails, receive recipes, and even buy the spirits to take home. So fear no more … come learn how to conquer the cocktail!

We’re celebrating the cocktail by asking you to share your cocktail photos. Cocktail art, the most delicious form of artistic expression, will be highlighted for the next six weeks in our Cocktail Art Photo Contest. You can enter often. All you have to do is like Aviation Gin’s Facebook page and upload your cocktail photos according to that weeks theme. A new cocktail art theme will be announced ever Wednesday for the next six weeks on the Aviation Gin Facebook page. Upload your cocktail art photo (can be homemade or from the bar) based on the theme and you’re entered to win! Incorporating an Aviation American Gin bottle is encouraged.

Weekly winners will be randomly selected to receive an Aviation American Gin Swag Bag and announced at the end of each week in addition to remaining in the running for the grand prize. “Cocktail Art Photo” Sweepstakes

Official Rules




The “Cocktail Art Photo” Sweepstakes (“Sweepstakes”) will begin at 12:00:01 a.m. Eastern Daylight Time (“EDT”) on May 22, 2013 and end at 11:59:59 p.m. EDT on July 3, 2013. (“Promotion Period”).  Facebook, Inc.’s computer is the official time-keeping device for the Sweepstakes. The Sweepstakes is sponsored by House Spirits Distillery, 2025 SE 7th Ave, Portland, OR 97214 (“Sponsor”). The Sponsor is responsible for all aspects of this Sweepstakes. Participation in the Sweepstakes constitutes entrant’s full and unconditional agreement to these Official Rules, and Sponsor’s and Administrator’s decisions, which are final and binding in all matters related to the Sweepstakes.


Eligibility: Sweepstakes is open to legal residents of all fifty (50) states of the United States and the District of Columbia who are at least 21 years of age as of the start date. Employees, officers and representatives of House Spirits Distillery, and Administrator, and any of their respective parent companies, affiliates, franchisees, licensees, distributors, suppliers, subsidiaries, retailers, advertising/promotion agencies (collectively, “Released Parties”) and members of the immediate family (mother, father, brothers, sisters, sons, daughters and spouse, regardless of where they reside) and household members of each such employee, whether or not related, are not eligible to participate. Winning a prize is contingent upon fulfilling all requirements set forth herein.  Void in Puerto Rico, the U.S. Virgin Islands, U.S. Military installations in foreign countries, and where prohibited, or restricted by law.


How To Enter: Online through Facebook: Eligible participants can enter the Sweepstakes through the Facebook application described below.  If a prospective participant is not already a member of Facebook, he/she may visit and follow the links and instructions to become a member. Once the eligible participant has become an active Facebook member, they have the opportunity to enter the “Cocktail Art Photo” Sweepstakes by visiting, clicking the “like” button to click the page, and following the entry instructions to complete the Sweepstakes registration. Note: NO PHOTOS THAT CONTAIN CHILDREN. The registration form will require a participant to enter the following information: full name, mailing address, city, state, zip, phone number, personal e-mail address, and date of birth. All of the aforementioned information fields are required fields for entry. Incomplete information may result in disqualification of entry. Each “like” and completed Sweepstakes registration and form will result in one (1) Sweepstakes entry. Limit one (1) entry per person per day per Facebook account during the Sweepstakes Period. All entries must be received by 11:59:59pm EDT on July 3, 2013.

Entries made by any other individual or any entity, and/or originating at any other web site or e-mail address, including, but not limited to, commercial Sweepstakes subscription notification and/or entering service sites, will be declared invalid and disqualified for this Sweepstakes. The use of automated entry devices is prohibited and no mechanically reproduced entries are allowed; all such entries are void. Sweepstakes Entities are not responsible for: late, incomplete, incorrect, delayed, garbled, undelivered, or misdirected entries. Sponsor reserves the right to disqualify any person or e-mail address that submits more than maximum allowed entries. All entries become the exclusive property of Sponsor and will not be acknowledged or returned. By participating, you consent for Sponsor to obtain, use, and transfer your name, address and other information for the sole purpose of administering this Sweepstakes.


Photo must be uploaded as a .jpg or .gif file not exceeding 4MB. All required information must be completed to enter and to be eligible to win. Incomplete entries will be disqualified. Proof of entering information is not considered proof of delivery to or receipt by Sponsor of an entry. Released Parties are not responsible for: lost, late, incomplete, illegible, incorrect, damaged, delayed, garbled, undelivered, misdirected, or postage due entries, essays and/or photographs. All entries become the exclusive property of Sponsor and will not be acknowledged or returned. Your submission of an entry constitutes your representation of eligibility, consent to participate in Contest and consent for Sponsor to obtain, use, and transfer your name, address and other information for the purpose of Contest administration.

Photos may not contain any image or depiction of the following: (i) photo’s bearing children in any capacity (ii) materials which include or constitute trademarks, trade names or copyrighted works created or owned by any person or entity other than Entrant or for which the Entrant has not obtained owner’s permission to use; (iii) materials bearing children, profanities, or bearing the name or likeness of any celebrity, living or dead; (iv) materials which contain visible identifiable or potentially identifiable information including but not limited to phone numbers, website links, street addresses, email addresses or license plate numbers; (v) inappropriate behavior for a general audience; (vi) nudity or any depiction of real or simulated sexual acts; (vii) violence in any form; (viii) materials which violate anyone’s reasonable privacy expectations, violate any known agreement, or which are defamatory in nature; (ix) materials which are derogatory to Sponsor, or any affiliated entity or person; (x) materials which are discriminatory based on race, religion, national origin, physical disability, age, sex, or sexual orientation or preference; (xi) materials in which any person identifiably appears where no appropriate written release has been obtained from such person granting all rights required herein; and, (xii) materials which do not comply with all other requirements in these Official Rules.  Entries which do not conform to these guidelines will be disqualified. Sponsor reserves the right to reject or disqualify any entry which Sponsor, in its sole and absolute discretion, determines to be inconsistent with the letter or spirit of the Official Rules or potentially damaging to its, the Contest’s, or another’s image or reputation.


Internet Limitations of Liability: Sponsor reserves the right, in its sole discretion, to cancel, terminate, suspend and/or modify the Sweepstakes, or any part of it, at any time, without notice, and to cancel, terminate, modify or suspend the Sweepstakes in whole or in part, at any time, without notice and award prizes using all non-suspect eligible entries received as of the termination/suspension date, if any infection, computer virus, bugs, tampering, unauthorized intervention, fraud, technical failures, or any other cause beyond Sponsor’s control, affects the integrity or proper conduct of the Sweepstakes.  Sponsor reserves the right, in its sole discretion, to disqualify any individual who tampers with the entry process (if applicable) or the operation of the Sweepstakes or to be acting in violation of these Official Rules or any other promotion or in a disruptive manner., Sponsor assumes no responsibility for any error, omission, interruption, deletion, defect, delay in operation or transmission, communications line failure, theft or destruction or unauthorized access to, or alteration of, entries. Sponsor is not responsible for: lost, late, incomplete, illegible, incorrect, delayed, garbled, undelivered, or misdirected entries; theft, destruction or unauthorized access to, or alteration of, entries; failures or malfunctions of phones, phone lines or telephone or data transmission systems; interrupted or unavailable network, server or other connections; any error, omission, interruption, defect or delay in any transmission or communication; traffic congestion on the Internet or any technical problem, including but not limited to any injury or damage to any person’s computer related to or resulting from Sweepstakes participation; typographical, printing or other errors or omissions in these Official Rules, in any Sweepstakes-related advertisements or other materials, or other problems or errors of any kind whether computer, network, mechanical, human, electronic, typographical, printing or otherwise relating to or in connection with the Sweepstakes, including, without limitation, errors or problems which may occur in connection with the administration of the Sweepstakes, in the processing of entries, in the selection or announcement of winners or in the awarding of prizes. Sponsor’s failure to enforce any term of these Official Rules shall not constitute a waiver of that provision.


Sponsor is not responsible for any damage to an entrant’s system which is occasioned by participating in this Sweepstakes or by downloading any information necessary to participate in the promotion.  Sponsor also is not responsible for incorrect or inaccurate entry information, whether caused by Internet users or by any of the equipment or programming associated with or utilized in the Sweepstakes or by any technical or human error, which may occur in the processing of the entries in the Sweepstakes.    CAUTION: ANY ATTEMPT TO DELIBERATELY DAMAGE ANY WEBSITE OR UNDERMINE THE LEGITIMATE OPERATION OF THE SWEEPSTAKES IS A VIOLATION OF CRIMINAL AND CIVIL LAWS AND SHOULD SUCH AN ATTEMPT BE MADE, THE SPONSOR RESERVES THE RIGHT TO SEEK DAMAGES OR OTHER REMEDIES FROM ANY SUCH PERSON(S) RESPONSIBLE FOR THE ATTEMPT TO THE FULLEST EXTENT PERMITTED BY LAW. In the event of a dispute regarding the identity of an individual who actually submitted an online entry, the entry will be deemed submitted by the authorized account holder of the email account.  “Authorized account holder” is defined as the natural person who is assigned to an email account by an Internet access provider, online service provider or other organization (e.g., business, educational, institution, etc.) that is responsible for assigning email addresses for the domain associated with the submitted email address. Potential winner may be required to show proof of being the authorized account holder.


Prizes:  There will be one (1) Grand Prize and six (6) Weekly Prizes will be awarded. Grand Prize winner will receive a trip for two (2) people to Portland, OR. The prize package includes two (2) economy roundtrip air tickets on economy class airfare. Two (2) nights standard (one room) hotel accommodations, dinner both nights, Collins glasses, t-shirts and a tour. Prize package has an approximate retail value (“ARV”) of $2,700. The trip must be completed before December 15, 2013.  Winner and winner’s companion will be required to travel on identical itineraries including the same departure date, destination city and return date. Travel dates have to be mutually accepted by the Sponsor.

Trip is subject to blackout dates, availability and is not redeemable for cash. Trip is non-refundable and non-transferable and subject to government regulations. This award is excluded from frequent flyer mileage credit and does not include code share flights. This award may not be sold to, bartered with, purchased or utilized by a third party. No refund or other credits will be provided if winner is not able to take the trip. Winner is responsible for obtaining proper documents if required. Travel insurance is not included. Winner and winner’s companion will be solely responsible for all other expenses not specifically set forth herein including and not limited to, airport taxes, airline taxes, security charges, land taxes, gratuities, souvenirs and any other incidentals. Odds of winning will depend on the total number of eligible entries received. By accepting any of the aforementioned prizes, the winners agree to release the Released Parties from any and all liability whatsoever for any injuries, losses, or damages of any kind caused by entering the promotion or for damages of any kind caused by any prize or resulting from acceptance, possession, or use/misuse of prize awarded, or while preparing for, participating in, and/or traveling to and from any prize-related activity. Prizes are not exchangeable, transferable, or redeemable for cash. There are no substitutions unless specified by the Sponsor. The Sponsor reserves the right at its sole discretion to substitute any prize package with another prize of equal or greater value.

Six (6) Weekly Prizes: One (1) weekly prize will be awarded a Branded Collins Glass and T-Shirt. Prize valued (“ARV”) of $ $30. Total Prize Pool $2,880.


Drawing and Notification: Grand prize winner will be selected from among all eligible entries received, in a random drawing by the Administrator, an independent judging organization, whose decisions are final in all matters relating to this Sweepstakes. The drawing will be completed on or about July 10, 2013.  Odds of winning will depend on the total number of eligible entries received.  The Grand Prize winner will be notified by telephone and/or USPS mail, or other home delivery service of Sponsor’s choice. Weekly Prize winners will be randomly drawn at the end of each week. Weekly winners will be notified by email and/or USPS mail, or other home delivery service of Sponsor’s choice.


Prize Conditions:  All local, state and federal taxes are the sole responsibility of winner. Upon initial notification and verification of the Grand Prize winner, confirmation will be sent to the winner via U.S. mail, or other home delivery service of Sponsor’s choice. The Grand Prize winner will be required to sign an Affidavit of Eligibility and Liability / Publicity Release and return it within ten (10) days of written notification by mail or prize may be forfeited and an alternate potential winner selected. If a prize or prize notification is returned as unclaimed or undeliverable to a potential winner, if potential winner cannot be reached within two (2) calendar days from the first notification attempt, if potential winner fails to return requisite document within the specified time period, or if a potential winner is not in compliance with these Official Rules, then such person shall be disqualified and an alternate winner may be selected for the prize at issue. The potential Grand Prize winner is subject to verification before any prize will be awarded.


Other Terms & Conditions: The Sweepstakes is responsible for all applicable federal, state, and local laws (if applicable). A tax Form 1099 will be issued to the Grand Prize for the ARV of the respective prize awarded. By participating in the Sweepstakes, entrants agree to be bound by these Official Rules and agree that: 1.) Released Parties and their designees and assigns shall have the right and permission to use (unless prohibited by law) the winner’s name, photograph, likeness, statements, biographical information, voice and address (city and state), in all forms of media, in perpetuity, without further notice, permission or compensation, and 2.) Released Parties and their designees and assigns and all of their respective officers, directors, employees, representatives and agents shall have no liability and entrant will indemnify, defend and hold Released Parties harmless from any liability, loss, injury, or damage to entrant themselves or any other person or entity, including personal injury, death or damage to personal or real property, to entrant or any other person or entity due in whole or in part, directly or indirectly, by reason of the acceptance, possession, use or misuse of the prize (including any prize activity or travel related thereto) or participation in this Sweepstakes. Entrants further acknowledge that said parties have neither made nor are in any manner responsible or liable for any warranty, representation or guarantee express or implied, in fact or in law, relative to the prize, including, but not limited to, its quality or fitness for a particular purpose.  Sponsor reserves the right, in its sole discretion, to disqualify any entry and to modify, terminate or suspend this Sweepstakes should virus, bugs, non-authorized human intervention, action of entrants, or other causes beyond the reasonable control of Sponsor corrupt or impair the administration, security, fairness or proper play of the Sweepstakes and, if the Sweepstakes is modified, terminated or suspended, at Sponsor’s discretion, select winners from those eligible, non-suspect entries. Entrants further acknowledge that said parties have neither made nor are in any manner responsible or liable for any warranty, representation or guarantee express or implied, in fact or in law, relative to the prize, including, but not limited to, its quality or fitness for a particular purpose.


Disputes: By entering the Sweepstakes, entrants agree that 1.) Any and all disputes, claims, and causes of action arising out of or connected with the Sweepstakes, or any prizes awarded, shall be resolved individually, without resort to any form of class action; 2.) Any and all claims, judgments and awards shall be limited to actual out-of-pocket costs incurred, including costs associated with entering the Sweepstakes but in no event attorneys’ fees; and 3.) Under no circumstances will any entrant be permitted to obtain any award for, and entrant hereby waives all rights to claim, punitive, incidental or consequential damages and any and all rights to have damages multiplied or otherwise increased and any other damages, other than for actual out-of-pocket expenses, and any and all rights to have damages multiplied or otherwise increased. All issues and questions concerning the construction, validity, interpretation and enforceability of these Official Rules, or the rights and obligations of the entrants and Sponsor or the Released Parties in connection with the Sweepstakes, shall be governed by, and construed in accordance with United States law. Any legal proceedings arising out of this Sweepstakes or relating to these Official Rules shall be instituted only in the federal or state courts of Oregon, and the parties consent to jurisdiction therein with respect to any legal proceedings or disputes of whatever nature arising under or relating to these Official Rules. The invalidity or unenforceability of any provision of these Official Rules shall not affect the validity or enforceability of any other provision. In the event that any provision is determined to be invalid or otherwise unenforceable or illegal, these Official Rules shall otherwise remain in effect and be construed in accordance with their terms as if the invalid or illegal provision were not contained herein.  The value of the prizes set forth above represents Sponsor’s good faith determinations of the ARV thereof and such determinations are final and binding and cannot be appealed.  If the actual value of any prize turns out to be less than the stated ARV, the difference will not be awarded in cash.

Cocktails and Gardening

Lavender Cocktail

Winter has left the building and Spring is in full bloom, which of course means two things, gardening and, wait for it…more gardening.  Why not reap the rewards of your garden a little early by using ordinary perennials to make extraordinary cocktails.   There are a few things in the garden that tend to come back year after year with little help that can make a delicious cocktail with just a little preparation.

If you live in a warmer and drier climate you most likely have bees buzzing around your lavender already, try this.  Grab a handful of lavender flowers to create a delicious lavender simple syrup to be used in a Lavender Lemon Gin Fizz, yum!  For cooler wetter climates, you most likely have mint growing somewhere in your yard which can be used for a refreshing Cucumber-Mint Gin and Tonic.

The Aviation Lemon-Lavender Fizz


2 oz. Aviation American Gin
1 ½ oz. lavender simple syrup*
¾ oz. lemon juice
Dash of club soda


  1. Pour gin, simple syrup, and lemon juice into a shaker and shake with flair.
  2. Strain into a martini glass (a fine-sugar rimmed martini glass, even better!) .
  3. Top with club soda, garnish with lemon and perhaps a lavender sprig, and serve.
  4. Humbly accept the heaps of praise, bat your lashes  and say “it was really”!

*Lavender Simple Syrup

Lavender simple syrup Ingredients

1 cup granulated sugar
1 cup water
1 ½ tbsp dried lavender buds


Heat sugar and water in a small saucepan with lavender until sugar is dissolved. Bring to a boil, then set to the side to cool. Strain out the lavender and refrigerate.

Cucumber-Mint Aviation/Tonic


3 sprigs of mint
2 inch piece English cucumber, halved lengthwise and thinly sliced crosswise
2 oz. Aviation American Gin
Splash of Tonic water
1 thin wedge cucumber, for garnish


  1. Strip leaves from two sprigs of mint and place in the bottom of a highball glass along with cucumber.
  2. Muddle with a muddling stick or the handle of a wooden spoon. Fill a glass (or an old mason jar) with ice.
  3. Pour Aviation gin over ice, top off glass with tonic, stirring once.
  4. Garnish with remaining mint sprig and thin cucumber wedge.


These are just a few ideas, so feel free to experiment with your own garden using rose petals, thyme or even lemongrass.  The possibilities for great tasting cocktails are endless!


Learning the Philadelphia Way


Aviation Nectar Tea

This amazingly refreshing summer cocktail is from the beautiful Chauncey Skates at the Palomar in Philadelphia. Chauncey is a spirited Kentucky girl with a passion for classic cocktails.

2 oz Aviation American Gin
3/4 oz Ginger Syrup
3/4 oz Freshly Pressed Lemon Juice
1 oz African Nectar Tea
1 dash Pechaud’s

Shake and serve over ice in a Collins glass.

Stirred or Shaken


To shake or not to shake… that is the question.

As a basic rule of thumb, cocktails are to be shaken when they include fruit juice, cream, or egg. Shaking a drink introduces tiny bubbles, which gives it a frothy texture, great for these types of drinks. Yum!

Stirred cocktails are comprised of mostly alcoholic ingredients such as spirits, vermouths, and bitters. These include the famous and ever-popular cocktails such as Manhattans and Martinis. Although Bond might have suggested otherwise, Martinis are to be stirred so as to blend the ingredients rather than mash them together, making for a velvety mouth feel.

So try it for yourself… the Aviation 50/50. Stirred to perfection! Raise your frosted glass and give a cheers to gin and to Bond.

The Original Margarita


If you’re drinking Margaritas for Cinco de Mayo this year, consider the gin version. Never heard of using gin in your favorite south of the border cocktail?

A brief history

A classic cocktail, the Gin Daisy, was enjoyed by many bar patrons in the pre-prohihbition era. With tourism taking Daisy loving cocktailers to Mexico, the Daisy recipe made it’s way south. Daisy in Spanish translates to “margarita.” Take out the gin, add in tequila, and switch lemon for lime (a more readily available citrus in Mexico) and you have the Mexican version of a classic Daisy.

The Gin Daisy

2 oz Aviation American Gin
1 Teaspoon Gum syrup
1.5 Teaspoon Orange cordial
0.75 oz Freshly pressed lemon juice (we used lime in honor of Cinco de Mayo)

In a mixing glass, add spirits and mixers. Fill with ice. Shake vigorously. Strain into a glass filled with fresh ice. Fill with seltzer water. Garnish with a lime wedge.

What better way to enjoy the Spring in Texas then at Hotel Palomar sipping on an Aviation cocktail. Industry veteran Amber West, the Bar Manager at this Dallas Kimpton property decided to go local and healthy.
